    William, This is wonderful! Thanks for sharing! We certainly knew some of this chemistry (like beta-carotene), but we were not in tune with the chemistries of the canned pumpkin and aroma compounds. Neat stuff that is actually perfectly timed to be included as real-world/relevant examples in my Organic Chemistry class (in which we were just today discussing the alkenes and their derivatives.
