Jacob is a current M.S. student in Biological Engineering with a passion for sustainable food production. Jacob is working with Dr. Ronald Sims and Dr. Cameron Copeland to address some of the challenges facing the use of hydrolysates in cellular agriculture and to establish a community of alternative protein researchers at Utah State University. Specifically, his research aims to separate non-essential phytochemicals and lipids from biomass to simplify predictive models for hydrolysate performance in cell culture and to generate co-products that could offset culture costs.
