August Fink is a 2nd year Molecular Engineering (Bioengineering track) major and Molecular, Cellular, and Tissue Engineering minor at the University of Chicago. He has no research experience as of yet, but is excited to start with cell culture and scaffolding with the UCicago Alt Protein Project. His interest in cultivated meat comes primarily from a wish to mitigate the adverse effects of humanity’s meat consumption on the climate, antibiotic resistance, and of course animal welfare, as well as a general interest in cell culture and tissue engineering. Secondarily, his interest in cooking has sparked interest in the possibilities of using cultivated meat technology to create new types of meats that can taste the same or better while being healthier, having different textures, or other differences in properties, which could allow for culinary innovation. Outside of academics, August likes to spend his time experimenting in the kitchen, playing double bass with the university’s orchestra, fencing, or backpacking.
