Sugar cookie

Unaltered recipe, adapted from this one by How Sweet It Is:

Ingredients:

1/2 cup softened butter

1 cup granulated sugar

1 egg

1 tsp vanilla extract

1 3/4 cup flour

1/4 tsp salt

1/2 tsp baking powder

Directions:

Cream butter, sugar, and salt, then add egg and vanilla until combined. Add flour and baking powder until incorporated. Cover and chill dough for at least thirty minutes.

Preheat oven to 375 and roll tablespoons of dough into balls. Place on baking sheet and flatten them a little. Bake for ~10 minutes, then remove to racks to cool.

Brown sugar trial: use 1 cup dark brown sugar in place of the granulated sugar

Corn syrup trial: use 2 tablespoons corn syrup with 14 tablespoons granulated sugar in place of granulated sugar

Stevia trial: use 1 packet of stevia for every 2 teaspoons of granulated sugar

About This Project

Sugar has an impact on baked goods that goes far beyond sweetness, influencing texture and spread as well as other aspects of flavor. I am curious as to what effect changing the type of sugar (among granulated, dark brown, and corn syrup) has on three classic cookies: sugar, chocolate, and chocolate chip. You should never have to settle for an un-tasty cookie, so with this experiment I hope to learn and share how to adjust the sugar of your recipe to enhance your cookie experience.
