Happy Monday everyone. We're a week into the funding campaign and astounded by everyone's generosity getting us to 41% of the budget already! That still means we've got a long way to go, but I'm confident that we can hit our total and hopefully exceed it.

For all of our current backers, thanks again, and I'd like to ask one more thing of you. If you have friends in the craft beer industry or who are mixed fermentation homebrewers, please let them know about this experiment. The more mixed culture samples that we get, the better, and I'd love to see them come in from all over the world. We know that $100-200 isn't cheap for beer science, but it could be a worthwhile investment for a brewery and/or lead to an easy way to start a mixed fermentation program.

About This Project

Mixed cultures create sour beers, but many brewers don't know which microbes are in their cultures. We will identify the species in 21 or more samples from pro/homebrewers using deep sequencing. We will also combine the cultures and follow the evolution of that population over the course of fermentation to determine which species are dominant. This work will highlight the similarities and differences between souring cultures, guiding the development of custom cultures for sour beer production.
